The second time to do the vertical tasting at the winery with Emily Laughton who's nowadays fully in charge of the domaine, but this time was a double vertical tasting of the two flagships, Georgia's Paddock Shiraz and Emily's Paddock Shiraz/Cabernet Franc. The tasting confirmed that Jasper Hill still remains at the pinnacle of Australian fine wine--it's a great honor to witness the continuation of the legend.

Georgia's Paddock Shiraz 2020 was dusty and serious. Georgia's Paddock Shiraz 2021 was delightful and refreshing, with a leathery background. Showing fresh succulence and powdery tannin. Georgia's Paddock Shiraz 2022 was solemnly closed, refreshingly precise and firmly tannic. Georgia's Paddock Shiraz 2023 was very stony and austere, with a fragrant backdrop. From the 2020 to 2023, Georgia's Paddock Shiraz contains a small proportion of purchased grapes due to the bushfire, but getting back to the exclusively estate grown fruits since the 2024. Georgia's Paddock Shiraz 2024 delivered a crackajack performance, representing the quintessential expression of this vineyard. Restrainedly classy and brightly alluring on the evidently dignified bouquet of…(for all the details, please subscribe)…culminated in a mineral-laced finish that demonstrated long-lasting flavours plus marvellous acid and a tad of salinity that underpinned the freshness and liveliness. The marked youthfulness indicated it might need a couple of years' cellaring to show its best. 2025 stands as one of the most prominent vintages of the estate in recent years. I was truly amazed by the almost crystalline purity and astounding refreshment presented in this terrific beauty. Jasper Hill Emily's Paddock Shiraz/Cabernet Franc 2015 was a classic Emily's Paddock that was lush on the bouquet that had a mixture of vanilla, cedar and cigar box. Fresher and more perfumed on the mouthfeel that was full of austere acid and defined minerality. Jasper Hill Emily's Paddock Shiraz/Cabernet Franc 2022 was austere but perfumed in the backdrop, with defined minerality. Dried flower, stone, herb and black fruits made up the refined yet serious nose and palate of Jasper Hill Emily's Paddock Shiraz/Cabernet Franc 2023. Jasper Hill Emily's Paddock Shiraz/Cabernet Franc 2024 was rich, sweet and dense. Not surprisingly, Jasper Hill Emily's Paddock Shiraz/Cabernet Franc 2025 stood out from the lineup. The lucid, refined and complete smell was packed with…(for all the details, please subscribe)…was the chiseled minerality. Unfolding less fullness and lushness but more pointedness than most of the previous vintages--suggesting a very promising future. Even in such a youthful stage, the stuff still emerged subtle aromaticity that epitomized the style of Emily's Paddock. As usual, this sought after wine has been produced in tiny quantities only so that you'd better be quick.

Dried flower, crushed stone, spices, raspberry, preserved plum and savoury made up the austere and clean sniff of Georgia's Paddock Nebbiolo 2024. Tannic, but juicy and acidic fruit offset the solemnity.
